We take care of all the details of production.

At Olivias, the first thing we do is assess how the harvest, quality and sizes of the olives have gone in different areas of the Mediterranean.

Every year is different due to weather changes,
since we buy our varieties in different areas such as Spain, Greece, Portugal, Egypt.

In the case of Gordal Olives, which are the ones we use in our Original line, we have two places of production: Greece and Spain. Depending on how the campaign has gone (if there is different quality and calibers) they are acquired from one place or another.
